Javier Plasencia (September 2nd 1967) Born and Raised in Tijuana, Mexico. After High School he went to study Culinary Arts in San Diego, California. Chef and Owner of Restaurante Villa Saverios that has been awarded with the “Distintivo H” , distinction that is given by the Tourism Board of Mexico and supported by the Federal Mexican Government for achieving excellent standards in the management of quality and hygiene. From of 2004, 2005 until 2007 Villa Saverios was awarded with the best wine list on mexican wines, an Award given by Rodolfo Gerschman, Director of "Catadores" Magazine, edited in Mexico City and distributed by "Reforma" News Paper. On the month of December of 2006, Villa Saverios Restaurant was awarded by culinary critics Enrique Castillo Pesado y Victor Hugo Rodriguez in their book from the series "Conoce y Viaja" as being within the one hundred best restaurants in Mexico.

BAJA CALIFORNIA CHEFS ASSOCIATION
As a Founder and President of the Baja California Chefs Association
organized important food and wine related events, gala dinners,
courses and contests, inviting distinguished Chefs all over Mexico like
Monica Patiño, Ricardo Muñoz Zurita, Federico Lopez, Sylvia Kurzyan,
Ricardo Bonilla, etc.
As a President and Founder Chef Javier promotes the cuisine of
Baja California around the globe.
In the Beginning of 2005 Mr,. Juan Fernando Healy (General Director
of Frontera Newspaper) invited Chef Javier to participate in the Diary
to write a gastronomic weekly column. Currently, Chef Jorge Javier
Plascencia is in charge of the gastronomic district of Tijuana.
Adviser of gastronomical events for "Camara Nacional de la Industria
Restaurantera Canirac Tijuana- Tecate”. Director and Founder of the
First Farmers Market, project that is being planned for 2008 in Tijuana
B.C. Mexico. Active Member of the California Restaurant Association
and from the Slow Food International.

Invited as a representative of the Mexican Regional Cuisine at the
Food and Wine Festival, in San Antonio Texas.
Participant of the Forum Mexican Cuisine of the School of Chef Salvador
Gallego in Moralzarzal Madrid , Spain.

Through the Baja California Chefs Association
we are always developing and encouraging
new cooking talents.
During the Vendimia festival in Valle Guadalupe,
as General manager of gourmet food for
Saverios, I designed the menu and the banquets
for some of the top wineries in Baja, like Adobe
Guadalupe, Viñas de Liceaga, L.A. Cetto and Casa
Domecq, among others.
One point of particular interest for me, is to
promote the gastronomical richness of Mexico,
and the great quality of our local wines,
products and organic produce, both locally and
internationally, by integrating Mexican cooking
techniques into every dish we serve.
Designed and served the menu for important
gala events for various diplomatic parties, from
around the globe. Likewise, I was personally
invited by the Governor of Baja California to
cook for the Governor of California, Arnold
Schwarzenegger, on his first official visit to Baja
California. More recently, I enjoy working to
develop new dish and serving proposals by
finding the balance between color, texture,
aroma and flavor.Chef Javier currently owns and operates the Following Restaurants: Villa Saverios in Tijuana, Baja
California, Caffe Saverios in Tijuana, Baja California, Casa Plasencia in Tijuana, Baja California,
Fine Catering in in Tijuana, Baja California. and Romesco Baja Med in Bonita, California, and it's been
successfully operating since may 2006.
